Ingredient Notes

GROUND BEEF AND PORK – Using a mix of both meats makes a big difference in flavor and texture. Beef adds a hearty bite, while pork keeps the meatloaf extra juicy and tender. If you’re only using beef, go with an 80/20 blend so it doesn’t turn out dry.
CRACKERS – These crushed crackers do more than just hold everything together. They add a buttery flavor that makes the meatloaf taste richer than if you used plain breadcrumbs. If you need a substitute, panko breadcrumbs work well for a lighter texture, and quick oats can be used in a pinch, though they’ll make the meatloaf slightly denser.
ONION AND GARLIC – Fresh onion and garlic bring depth and balance to the meatloaf. If you prefer a milder onion flavor, sautéing the onion for a few minutes before mixing it in will mellow out the sharpness.
EGGS AND MILK – These are the key ingredients that help bind everything together while keeping the meatloaf tender and moist. Whole milk is the best choice for richness, but 2% will still work. If you swap in a non-dairy option, the texture may be slightly different.
SAUCES – Ketchup adds a little sweetness and moisture to the meat mixture, while Worcestershire sauce deepens the flavor with a savory, umami-rich taste. These two ingredients work together to give the meatloaf its classic flavor.
SEASONINGS – A simple mix of Italian seasoning, paprika, salt, and black pepper brings warmth and balance to the meatloaf. Italian seasoning adds a blend of herbs, paprika gives a subtle smokiness, and salt and pepper enhance all the flavors. If you don’t have Italian seasoning, a mix of dried oregano and basil will work just as well.
SUGAR, VINEGAR, AND MUSTARD – This is what makes the sauce shine. Brown sugar brings in just the right amount of sweetness, apple cider vinegar adds a little tang to balance it out, and Dijon mustard gives it a slight sharpness that cuts through the richness of the meatloaf. The result is a sauce that’s bold, flavorful, and caramelizes beautifully in the oven.
How To Make A Classic Meatloaf Recipe
Please check the printable recipe card below for more detailed instructions.

- Mix meats, crackers, onion, garlic, eggs, milk, ketchup, Worcestershire, and seasonings.
- Shape into a loaf, place in a greased pan, and bake at 375º Fahrenheit for 40 minutes.
- Whisk ketchup, brown sugar, vinegar, Dijon, and paprika for the sauce.
- Spread sauce, cover with foil, bake 20 more minutes, and let rest before slicing.

Leftovers and Storage
STORE – Keep any leftover meatloaf in an airtight container in the refrigerator for up to four days. If you’re planning to reheat individual portions, slicing it before storing makes things easier. The flavors settle even more overnight, so leftovers taste just as good the next day.
FREEZE – Meatloaf freezes beautifully whether you freeze it whole or in slices. Wrap the cooked and cooled meatloaf tightly in plastic wrap and then a layer of aluminum foil to lock in freshness. If you prefer to freeze slices, store them in freezer-safe bags with parchment between them for easy separation. It will stay fresh for up to three months. Thaw it overnight in the fridge when you’re ready to use it.
REHEAT – Preheat your oven to 350° Fahrenheit. Place slices in an oven-safe dish, cover with foil, and heat for about 20 minutes. Add extra sauce on top to keep it moist. Alternatively, microwave slices with a damp paper towel covering them to prevent drying.
MAKE AHEAD – If you like to prep meals in advance, this meatloaf recipe is a great option. You can mix everything together and shape it up to a day ahead, then cover and refrigerate until you’re ready to bake. Let it sit at room temperature for about 15 minutes before going into the oven so it cooks evenly.

Serving Suggestions
MASHED POTATOES – Creamy and buttery with just the right amount of richness to soak up that tangy-sweet sauce. A classic pairing that never fails.
ROASTED CARROTS – The natural sweetness of roasted carrots balances the savory, seasoned meatloaf. Roasting brings out their best flavor with caramelized edges and a tender bite.
GREEN BEANS – A fresh, simple side that adds a little crunch and a bright contrast to the hearty meatloaf. Steamed, sautéed, or roasted, they always work well.
MAC AND CHEESE – The ultimate comfort food duo. The creamy, cheesy pasta makes the meal extra satisfying and pairs perfectly with the bold flavors of the meatloaf.
DINNER ROLLS – Soft and fluffy with just the right amount of chew, these rolls are perfect for sopping up extra sauce or making a quick meatloaf sandwich with leftovers.

Recipe Success Tips
DON’T OVER MIX – The more you mix, the tougher your meatloaf will be. Gently fold everything together just until combined so the texture stays light and tender. It should hold its shape without feeling packed too tightly.
LET IT REST – Cutting into meatloaf too soon is like slicing into a steak right off the grill. The juices will run out, leaving you with dry slices. Letting it rest for at least 10 minutes helps it stay moist and makes slicing easier.
USE A MEAT THERMOMETER – The safest and easiest way to know your meatloaf is fully cooked without drying it out. It should reach 160º Fahrenheit at the center. Checking the temperature ensures perfect doneness every time.
PREVENT STICKING – Spray the bread pan lightly with nonstick cooking spray or line it with parchment paper to make removal a breeze.
MAKE EXTRA SAUCE – If you love a saucy meatloaf, doubling the sauce is a smart move. Use the extra for drizzling over slices, spooning onto mashed potatoes, or even dipping bites as you eat.
RITZ CRACKER ALTERNATIVES – Italian breadcrumbs, oats, or even panko breadcrumbs can replace Ritz crackers. Choose a finely ground option for the best texture.
TRY LIQUID SMOKE – If you want a hint of smoky flavor without using a grill, a little liquid smoke goes a long way. Just a teaspoon in the meat mixture or sauce adds a subtle, savory depth that makes it taste like it was slow-cooked over a fire.

Commonly Asked Questions
Can I use only one type of meat?
Yes, but using a mix of beef and pork gives the best flavor and texture. If using only beef, choose a slightly fattier blend for moisture.
Why does my meatloaf fall apart?
This often happens if there aren’t enough binders like eggs and breadcrumbs. Make sure you follow the measurements and avoid over mixing the ingredients.
Can I customize the sauce?
Yes! You can make it sweeter by adding more brown sugar or tangier by increasing the vinegar. For spice, add hot sauce or cayenne pepper.
What can I do if my sauce is too runny?
Simmer the sauce longer on low heat to thicken it, stirring occasionally. If it’s still too thin, mix a teaspoon of cornstarch with a tablespoon of water and whisk it into the sauce.
